This is the time year when zucchini starts piling up on the break room table at work, on people’s door steps, friends bring them to church…to the point they almost become to summer what fruit cake is to Christmas.

Here is an easy way to preserve zucchini if you enjoy it for breads, muffins, cakes, fritters, casseroles etc. (basically any recipe that calls for shredded zucchini). Because zucchini has such a high water content, it tends to form a lot of ice when shredded and frozen. Try shredding it and then allow it to dry out before dividing it into recipe size quantities (about 2.5 cups) and freezing in bags. A dehydrator works great, but if you don’t have one, just use cookies sheets or cooling racks, turning occasionally. Let it dry out about 25-50% between fresh and completely dried.
The fact that it’s already shredded and measured out, whipping up a batch of zucchini bread around the holidays is simple.
